BRAND NEW [WEDNESDAY]

(Not) in a state of Flux

July 4, 2007

Flux BistroFunky atmosphere, fabulous décor, tasty fare. . . it must be Flux Bistro in Gastown.

Flux opened last month and if you’re in the Gastown ‘hood, drop by for a quick ‘n delicious lunch on-the-go, or drinks and sharing plates with friends after work.

Exposed brick walls, black leather high-back chairs and black laquered tables are offset by a red wine rack over the length of the bar and a unique illuminated lighting wall that runs through part of the restaurant, spanning a rainbow of different shades and moods.

Chef and owner Vincent Wong, whose pedigree includes Joe Fortes, Seasons in the Park and Bridges, specifically recommends the chocolate butter poached tuna, shrimp and papaya salad and spinach salad with mini saganaki – and who are we to disagree?

It’s a twist on west coast cuisine that’s well priced and running in fine form already. . .

Flux Bistro, 162 Water Street, 604.678.8800.
